On the Mac side, I record the video screencasts with Snapz Pro X. Specifically, I record the video with a fixed camera at 10 frames per second and save it with the “Animation” codec. Then I import it into iMovie and add scene transitions and other fluff. Finally, I export it as MPEG-4, H.264 codec “Main” profile, 640 x 480, 10 frames per second, bitrate 100, AAC-LC audio at 48 KHz. Exporting to iPod is the same except at 320 x 240, with the “Baseline” H.264 profile.
On the Windows side, I record the video screencasts with DemoStudio. Video settings: Microsoft Video 1, 30 frames per second. Then I transfer it over to the Mac and drag it into iMovie for further editing.
Both programs allow you to record a simultaneous audio track from an external microphone. I use a Shure SM57 microphone and a Behringer Eurorack UB802 mixer.
